Mosaic is a daughter of Simcoe and Nugget and has been humorously called Citra on steroids. It became available to the commercial market in 2012. It can be used at any point in the brewing process.

Packaging:
The hops are gently weighed, nitrogen flushed and sealed in light-tight aluminum-coated packaging for optimal shelf life.
Flushing with nitrogen displaces oxygen that would otherwise degrade the quality of the hops. This method lowers the oxygen content in the bag to 0.6-0.8% oxygen which is very good for preserving quality/taste/aroma. The hop bag is stored cool at <4 degrees Celsius.

The opened bag is squeezed together and closed with a ziplock for further storage in the refrigerator.
